1.2.3. Perspective, Cheese Crowns & Riding the Wave



Perspective, it changes everything. Seeing the world from a different angle can make things so much better… or worse.

I’m completely guilty of getting way too far ahead of myself. I will sit and stew over something that hasn’t happened yet and create a thought loop that builds a very different reality than the one I am in. That can be depressing when I’m trying my hardest to be present with the people that I love, but they know I’m somewhere else. A small change in perspective has the power to take you anywhere.

I am truly working on letting go. Anxiety can eat you alive, especially when owning your own restaurant. So many things will go wrong before they go right. People disappoint you and things change every day. I am really trying to find comfort in the struggle. I need to always look at the bigger picture and understand that going through something once prepares me for the next time. Life is unpredictable so there is no point staring into a crystal ball. I have to be better at looking into people’s eyes instead of staring right past them. The restaurant industry will kick your ass…BUT…as long as you come with a “glass half-full” mantra, that ass kicking will come as a gift. It’s all how YOU choose to see it.


I’ve been trying to figure out how people get these beautiful cheese crowns on their Detroit style pizzas.

Well, after 7 years I finally figured it out. What we did was dry out low moisture shredded mozzarella in the fridge, put it on a sheet pan and let it sit overnight. With that dried out mozzarella all you have to do is build a wall with the dried out cheese around the pan. Put that sucker in the oven and… Wah-lah! You have a beautiful cheese crown. People will be calling you Justin DeLeon on in no time!
