1.2.3. Growth, Reflection, and Appreciation

Three quick bites to enhance your pizza game


Last week marked 1 full year of 1.2.3. Wednesday newsletters. Reflecting on this process and what Matt and I set out to accomplish with these a year ago brought up all kinds of feels.

It’s been amazing to see the readership grow and I’ve had the honor to connect with a lot of new folks because of it. I’ve gotten emails, text messages, and even face-to-face chats in Hot Tongue to talk about the things people have taken away from these over the past 52 weeks.

The original intent was to create something that might help others to be more successful in some way, to talk about the things I wish someone had talked to me about. Not sure what to expect, I started rambling about the issues I was dealing with week after week and publishing it on the internet. In the end, this process may have helped me the most. I just want to say thank you to everyone who read along in 2022, and a huge thank you to those who reached out, asked for help, or just offered continued to support.

I have so much to be grateful for, so many people I’ve met this last year, and connected with through these emails. Gratitude is so important. It’s the thing that reminds us that a bad day is just that. There are always things to be happy about, things that are going well, air to freely breathe, legs to walk on, and a bed to sleep in. It’s always the little things that matter most in any recipe.

The weight of this experience has been priceless and life changing. From the bottom of my heart. Thank you, thank you, thank you.

We are going to take the next 3 weeks off to regroup, enjoy time with our families, and plan out the new year. Exciting things are coming in 2023, so stay tuned!


I’m kicking it back to the first recipe video Matt and I made last year. It’s still better than anything that’s on the shelf at a grocery store.

You just need a couple hard to get ingredients (not that hard to get on Amazon) and you will be making better vegan cheese than anyone around!
