Three quick bites to enhance your pizza game
Here’s one word that I find fascinating: authentic.
How does one make something authentic? What goes into it that’s different from anything else? And does it even matter?
When it comes to pizza, someone can get themselves into pretty rough waters by not sticking to a set of very linear rules for what makes a slice “authentic”, with people at every turn yelling, “respect the craft!”
It took me a minute, but I’ve come to learn that the best pizza is the one I’ve developed, not the one some dude from Barstool Sports says is good. You might not agree with me, and that’s totally cool and also the magic of being human.
Anything can be whatever you want it to be.
People are just people, and at least in my life, I let my opinion about myself matter the most. Believing you are making great pizza: that is what’s going to define the most authentic pizza out there. Because it’s authentically you.
Rules are written by people, not gods. Do whatever you want because it doesn’t matter. Explore, try crazy shit. Make your pizza dough with a bagel recipe. Make your pizza dough with a hydration of 50%, 20% of it olive oil, and tell everyone to suck it because your crust is coming out fire. Do weird shit because that’s when the magic happens.
But as with everything in life, beware of getting caught up in comparison. Just be your authentic self, and the food will follow.
There are so many gems and cool ideas to play around with around in here. I’ve found it very straightforward and easy to maneuver through.
Do you, all the time. Your food, restaurant, and relationships will suffer if you aren’t being you all the time. There are a lot of pizza shops everywhere, but there is no your pizza shop anywhere.
