1.2.3. The Unexpected Magic of Rolling With The Punches

Our dough recipe has undergone numerous iterations, likely surpassing version 100 by now.

Lately, we’ve encountered challenges due to fluctuating demand for specific flours and unpredictable allocations from certain brands. This has compelled us to make sudden switches without much notice, keeping us constantly on our toes. It’s tough when the key ingredients you pride yourself on suddenly become unavailable.

But as with many aspects of the restaurant industry, and life in general, there’s often little time to dwell – you just have to adapt to the situation as best you can. Sometimes, amidst forced changes, unexpected magic can emerge.

It’s often more beneficial to roll with the punches rather than resist them.

I’ve learned that reacting with anger in these situations, or any situation for that matter, rarely leads to a favorable outcome.

Thankfully, the dough hasn’t struggled – just me a little bit.
