We naturally tend to compare our stories, challenges, and successes to others. However, comparisons can be misleading because we often only know half the truth about someone else.

It’s so easy to focus on the achievements of others and overlook our own.

That’s why it’s important to regularly celebrate even small accomplishments. Believing in yourself is key to avoiding the pitfalls of constant comparison.

I’ve been perfecting my sourdough “Detroit” square at Hot Tongue. It boasts a hydration level of about 71%, and each dough ball weighs around 20 oz, resulting in the perfect weight and rise. After a 24-hour fermentation in the fridge, we proceed to par bake it at room temperature the next day, reaching 520 degrees for 8 minutes. The final bake time, including toppings, is 13 minutes. Marinara and Parmesan Reggiano are added after the initial bake.
